About the Business

Olympia Provisions was founded in 2009 in Portland's inner southeast industrial district. We were the first Oregon company certified by the USDA to craft and cure delicious meats. Over the years we've expanded from one tiny restaurant and meat shop to five bustling restaurants and a vibrant production facility that distributes our delicious meats nation wide! We believe the best food and dining experiences come from local high quality ingredients, attention to detail, and exceptional service.

Tucked into one of Portland's beautifully restored industrial buildings, Olympia Provisions Southeast has grown from establishing the city's first salumeria to being a destination for refined, European-style dishes. Our menu here is guided by the capable hands of chef Katie Roe, and reflects an innovative approach to the traditions of rustic Spanish and Mediterranean cooking. In combining these methods with the clean, bold flavors of the Pacific Northwest, Roe's dishes highlight the locally-sourced meats and seasonal vegetables you'll find on her menus.
