About the Business

The idea for The Handpulled Noodle came about out of a intense craving for the home cooking and food of the region where I was born; North West China (Xinjiang). Upon moving to New York it surprised me to discover that it was impossible to find certain dishes (Lagman /Ding Ding noodles) that were pulled fresh per order. I even schlepped all the way to Brighton Beach from Harlem in the middle of a snow storm to satiate this craving once but was disappointed to discover that the noodles were not prepared fresh per order but pre-cooked. So the wheels started turning and the idea of the The Handpulled Noodle was conceived!

We call our food 'North Western Chinese Soul Food'. Rustic dishes that showcase pulled noodles in three styles - Lagman / Ribbon & Debuting in New York - Chopped Ding Ding noodles in a build-your-own style that can be paired with spicy cumin lamb and a yummy veggie stir-fry with your choice of protein. Vegans and Vegetarians don't have to miss out either because we can make nearly all dishes using homemade seitan!

Owner Andrew Ding created the menu for The Handpulled Noodle as an answer to his nostalgic cravings for his mothers home cooking. The food showcases a region of China less well known in the culinary landscape here in the US; Northwest China, specifically the Uyghur Autonomous Region of Xinjiang. Food of this region can be described as hearty, wholesome, flavorful and unapologetically rustic and makes use of spices that are not typically associated with Chinese cooking like cumin and cardamom.
