About the Business

MINAS is named after the southern Brazilian state of Minas Gerais, which is known all over the country as the heart of the most authentic Brazilian cuisine, such as feijoada, pão de queijo, and feijão tropeiro. MINAS' cuisine has a strong European and African influence. Chef and owner Jose Montes hails from this area. He has brought his Brazilian pride, training, and generational knowledge of cuisine and barbecue right to downtown Calgary, where his barbecue is served tableside on skewers, in the classic rodizio style and with the most traditional Brazilian dish accompaniment.

Over the last 25 years, executive chef Jose Montes has honed his skills in preparing high-quality meats and food in the traditional Brazilian style. He has successfully built the reputation of several restaurants in five different countries, on three different continents: Brazil, Japan, China, the United States, and Canada. In Canada, he was chef and co-owner of a Brazilian barbecue. He now uses that extensive experience in his own Brazilian restaurant.
