About the Business

The Baldinucci name goes back to the Renaissance age, when the famous artist Filippo Baldinucci curated and documented the greatest artists in the world for the Medici family in Tuscany. Since then, generations of Baldinucci have found their passion in art and food, including our father, Enrico Baldinucci, who was born in Italy and who worked in fashion before opening his own pizzeria in New York in 1977.

Growing up in that pizzeria, we learned the craft at a young age, and over four decades in the business, we took in additional lessons from an entire generation of Italian-American pizzaioli who created delicacies that much of the country has yet to discover.

We combined our family legacy, our culinary influences, experiences from around the world, and fresh, local ingredients to bring you a modern version of Roman style pizza that blends food and art. We provide an elevated pizza experience that is delicious, healthy, sustainable, and convenient.

We make two different types of dough - a New York style and a Roman style. Roman style pizza is characterized by using a high-hydration dough that rises up to 72 hours and produces a tall, airy crust that is crispy on the bottom, yet light and fluffy on the inside. It is stretched into square pans, baked to perfection, and then topped with premium, quality ingredients that combine to offer something for everyone. Cut into squares, it is then served “al taglio”, which translates to "by the cut.” We offer traditional combinations from Italy like the margherita and the best of New York recipes, alongside creative combinations inspired by regional, seasonal ingredients and local culinary influences. We also offer gluten free, vegetarian, and vegan options so that there is a healthy and delicious pizza for everyone.
