Owners Mark Gibson and Mikey McFerran, cousins from Dublin, Ireland and Glasgow, Scotland, respectively, opened The Spaniard with co-owner and chef PJ Calapa from Texas. The idea was born many years ago: Mikey was tending bar at Bua, where PJ was a regular -- they became pals and dreamed about opening a bar together one day. They were inspired by classic New York bars like Keens, Old Town Bar and PJ Clarke's -- spots that marry a timeless vibe and old school service.
