About the Business

The fine cuisine of Tarascos is a Bermudez' family tradition handed down from generation to generation. Founder and Executive Chef of Tarascos Noe Bermudez learned his families' traditional recipes from his mother Maria Trinidad-Bermudez a locally esteemed chef in Tijuana, Mexico.

Noe has grown up learning the art of cooking. He has been in the restaurant business for over 20 years as a chef and manager. He is incredibly passionate about his food as well as the tradition and history of the recipes. For Noe it is far more than a dish but a piece of his heritage, it is a part of who he is.

Noe's passion behind Tarascos is to "Bring the taste of Michoacan cuisine to Colorado." His traditional recipes are over a century old straight from Michoacan Mexico.
"I really appreciate when people come to my restaurant and enjoy my dishes, and they discover a different way to enjoy Mexican food. It is more than burritos and tacos."

Tarascos specializes in authentic Michoacan cuisine. We make all ingredients fresh and from scratch, bringing Michoacan authenticity to every dish. Tarascos satisfies every pallet from traditional dishes to vegetarian. We offer an all natural juice bar menu with over 34 nutritional drinks. We are also renown for our Mole siete chiles made with more than 33 separate ingredients. We are fortunate to find all the fresh ingredients locally to make this original dish from scratch. Imagine ingredients such as chile guajillo, chile de arbol, chile morita, chile cascabel, chile pasilla, chile negro, and ancho along with 26 other fresh ingredients on one single plate. This dish is a microcosm to how much effort is put into each dish.
