The Parlour Group employs 80 people and is constantly expanding. Starting with a small 35 seat restaurant, The Flying Squirrel Tapas Parlour in Bondi, the company has expanded ventures to include The Stuffed Beaver Bondi, Sydney's first Canadian themed bar, the classy 200 seat New York style restaurant, Riley St Garage in Woolloomooloo, Surly's, an all American BBQ Restaurant in Surry Hills and most recently The Village Inn in Paddington.

What defines the BBQ at Surly's is that it is not just a focus on the popular yet small region of Texas, but showcases all of the regions distinct styles and flavours of Texas, Memphis, Caroli- na and Kansas City into one. The beer selection is epic and strongly concentrated on backing 'the little guy', but also with a nod to some North American dive beers such as Coors and Blue Moon.
