About the Business

Original owners, of this local hideaway, George & Linda Saaz brought something unique intoexistence that became one of Canada's best new restaurants in 2007. It created a new era in Victoria dining and helped mold it for the next decade.

Today we take what George & Linda built and take it backward a century or so to make it unique to this city again.

Our Fernwood neighborhood is a couple of old European style side streets just out of the downtown. The wine program is small production, old world natural. The bar is designed beyond its classicist cocktails with a Parisian bent that encompasses long forgot aperitifs & digestifs.

The food is now pre-nouvelle French small plates. It is rooted in French history and edited for centuries to both maximize flavor and achieve practical old-world sustainability. This style of cooking is now more relevant than ever before.

stage is both a romantic and social hole in the wall found in the funky Fernwood neighborhood which is worth the $5 cab fare to escape the traps of downtown. The food is sharing & comfort French, the wine is old world and the cocktails are classic. This is the best place in the city to grab an absinthe and chat with the regulars or canoodle in the corner with your hun over a bottle of vin and some shares.
