About the Business

Although much has changed (now three locations and a microbrewery), we remain firmly dedicated to our original goal; provide our customers world-class handcrafted beer and food in a warm, friendly environment. As Squatters grew we embraced the Triple Bottom Line philosophy of People Planet Profit. We source healthy ingredients and use environmentally friendly products and services from within our local eco-region. We develop long-term relationships with farmers, growers and suppliers so we know exactly what is, and is not, in the products we buy. We choose to support local non-profit organizations. We buy BlueSky wind power and are continuously working to reduce our carbon footprint. We believe these and other practices contribute to a healthy community and environment, locally and globally, making our city a better place to live, work, and drink world-class Squatters beers.

Founding partners Peter Cole and Jeff Polychronis, followed the American brew pub revolution from the beginning in the early 1980's. The pair undertook a yearlong pub crawl, sampling beers throughout the west. With a swill and a swallow and after many nights of great appreciation of beer, they decided it was time that Salt Lake had a brew pub of its own. Squatters brewmaster Dan Burrick started brewing Squatters beers in 1989 and now oversees the production of Squatters bottled and draft beers available in restaurants, bars, hotels, resorts, grocery and convenience stores throughout the intermountain west. One of handful of American female brewers, Jenny Talley joined the brew crew in 1991 and became brewmaster of Squatters pubs with the opening of the company's microbrewery in 1994.

Jeff Polychronis and Peter Cole are the Founding Partners of Salt Lake Brewing Co., L.C.  In their former lives as commercial real estate developers, Peter and Jeff traveled a great deal.  During frequent business trips to Portland, Oregon, they could often be found, at the end of a day of meetings, winding down in one of the city's renowned microbreweries.  They realized that they were having a lot more fun at the end of the day than during it.  Their natural love of good beer was reinforced on these visits, where they could try a wide variety of beers and learn about how they were made.  It was only a matter of time until they began making beer for themselves.
