Chef Polo relocated to Houston from Puerto Vallarta in 1990 due to the undeniable appeal of the restaurant industry. Post Oak Grill, the most prominent 5-star restaurant in Tanglewood, offered a favorable opportunity and he was quickly promoted to chef and kitchen manager. In 2002, he purchased the restaurant with the help a Mexican businessman residing in Houston. Perseverance, long hours and personal sacrifice paid off when he obtained exclusive ownership in 2004.

Delivering personal attention to customers and providing an unparalleled dining experience to the most demanding palates is what sets Chef Polo apart from the competition. His charisma, drive and sumptuous dishes create an atmosphere that attracts a diverse group of dignitaries and high-profile clientele.
