About the Business

Originating in the 19th century, what we have come to know as "pizza" began as dough used by bakers to determine the temperature of their ovens. Realizing its potential as a quick and easy meal to prepare, as well as a way to get rid of ingredients that would otherwise go to waste, it became known as "the dish of the people", and was sold in the streets of Italy

At the time, Raffaelle Esposito, the owner of a small tavern in the town of Napoli, was considered by many to be the premier pizza-maker of the city. Having caught the eye of the then Queen Margherita of Savoy, Chef Esposito was tasked with preparing both the King and Queen a pizza.

A truly proud Italian, Chef Esposito would use a combination of tomatoes, mozzarella and basil to emulate the colors of the Italian flag. The Queen enjoyed the pizza so much; she went on to praise the chef, making him a celebrity of among the poeple. In return, Chef Esposito would call his new dish the "Pizza Margherita", and so, pizza was born.
