How did a nameless street stall in Ho Chi Minh City become an internationally-acclaimed restaurant in one of the best culinary cities in Canada?

First opening in 1995 on the streets of Saigon, Chef Nguyen Thi Thanh’s daily rotation of 7 noodle soups made her a hidden gem among HCMC locals in Vietnam. In 2008, her then-unnamed food stall caught the attention of celebrity chef Anthony Bourdain on his hit TV Series, “No Reservations”, which catapulted her humble craft onto the international stage. In 2020, Lunch Lady Vancouver finally opened its doors and is Chef Nguyen’s take on modern Vietnamese cuisine.

Lunch Lady is not your average pho joint – dishes showcasing the PNW’s best ingredients, craft cocktails, and Michelin quality service makes us a crowd favourite among locals and international guests alike. Lunch Lady is the new Vietnamese casual dining restaurant in the location that was formerly occupied by Victoria’s first restaurant, Five Elements Cafe. One of Victoria’s favourite aspects of being a co-owner of Lunch Lady is being able to share parts of her life through the language of food. Did you know that the Chè Ba Màu was inspired by her memories of working in her parents’ restaurant in Saskatchewan? Victoria’s culinary legacy is multigenerational; from working with her siblings to run her family restaurant, to opening her own restaurant Five Elements, and also raising a son who helped launch Lunch Lady Vancouver. Sharing the beauty of Vietnamese cuisine is in her DNA.
