About the Business

Jah Bar first established itself with the original, and still existing, restaurant in the beautiful seaside "village" of Manly. Current owners Joe and (chef) Colin Bond took over the restaurant and whilst largely keeping with original tapas concept, took the food and the drinks to whole new level courtesy of a focus on high quality ingredients combined into dishes that reflect Colin's vast experience, particularly as a chef based out of Majorca.

In 2016 Jah Bar Dee Why was opened with a stunning view over the Dee Why beachfront. The concept is the same but Dee Why very much has its own atmosphere reflecting perhaps a slightly more laid back personality of the area.

Food at Jah Bar is sourced locally and ethically, all seafood is fully sustainable and sourced to the bench mark of sustainability. All animals come from the green pastures of Cowra, being hormone and chemical free. Our food philosophy is that fresh food is already beautiful so we try to let the produce speak for itself. We work on an absolute no wastage menu with seasonal availability in mind. We believe by using extra virgin olive oil, citrus and quality sea salt as our base seasoning we can keep our approach to food light and relatively simple.

With a background in the Middle East, cruising luxury yachts on the the Mediterranean, through to colourful Byron Bay, Jah Bar's chef and owner Colin Bond has a wealth of experience. It is all showcased on his menu of modern Spanish tapas. Share plates made from top quality, seasonal and ethically sourced local produce brought to life in various intoxicating treats! Speaking of intoxicating, Colin applies the same creative magic to the various cocktails and the ever favourite red (and white!) jugs of sangria. Jah Bar offers a number of weekly specials and hosts live music on various days of the week, ensuring a loyal, and well fed, crowd.
