About the Business
Chef Paul Sussman brings decades of experience to the kitchen at French Quarter. In 1991 he opened Daddy-O's in Cambridge. From there, he opened Macondo Latin Grill, drawing from his South American heritage (his mother is from Chile), after which he spent time as an executive chef. In 2012 Paul partnered with Brad Fredericks to open Back Deck, a polished casual destination in downtown.
Co-Proprietor Brad Fredericks began his restaurateur career in 1989, when he opened Fajitas and 'Ritas, named after the staples of his diet while living in Texas. Over the next decade, Brad opened several other Fajitas and 'Ritas and partnered with his wife, Maria, to launch Finnegans Wake, a Cambridge restaurant inspired by the cuisine and hospitality of Maria's native Ireland. When the space a few buildings down from Back Deck became available, Brad knew it was a great opportunity to create another unique concept for the thriving Downtown neighborhood he enjoyed being a part of for the past 31 years.
