Tony grew up in the restaurant business. Beginning in 1979, Tony helped his family with their first Enchilada's restaurant. In 1988, Tony assumed complete control of the business, buying out all investors. One year later, 1989, the second Enchilada's opened, funded entirely through cash flow. The Enchilada's group is celebrating its 38th Anniversary in 2017
