About the Business

Iowa native Lon Symensma was 14 when he was hired at a diner and discovered how much he enjoyed the energy of a professional kitchen. In 1997 the American Culinary Federation named him National Junior Chef of the Year, after which he enrolled in the Culinary Institute of America. Following graduation he worked at a pair of Michelin two-star restaurants in the south of France and other locations in Europe. By 2001 Symensma joined esteemed chef Jean-Georges Vongerichten at his New York City restaurant, where he developed a passion for dynamic Asian ingredients. He traveled extensively in Southeast Asia and China, helping open Jean-Georges Shanghai, returning to New York City as Sous Chef for the opening of Spice Market, Jean-Georges' Southeast Asian restaurant. Before long he was tapped to lead the kitchen of Buddakan, Stephen Starr's renowned New York City restaurant. After four years at Buddakan, Symensma moved to Denver in 2010 to open ChoLon Bistro, featuring modern Asian cuisine.

ChoLon Market, the largest Chinese-influenced market in Saigon, helped serve as inspiration for Chef Lon Symensma's ChoLon Bistro. The LoDo restaurant showcases his passion for Asian ingredients and French cooking techniques in a striking, eco-friendly space. ChoLon will serve lunch and dinner, as well as a small bites menu that will be available throughout the day, in a welcoming environment for all ages. The menu features inspired interpretations of traditional Asian dishes. "Many of my dishes are twists on classical Asian cuisine," says Symensma. "I look forward to sharing my own personal perspective on the flavors of Asia." The menu offers several categories designed to allow guests to sample and share many different tastes and flavors during their meal. The bar and lounge will serve handcrafted, artisanal cocktails developed to enhance Symensma's creations. The venue is also ideal for business meetings and presentations, featuring a large projection screen in the lounge area.
